Podcasting is a form of audio broadcasting on the Internet. Despite the name, you don't need an iPod to listen; you can use your computer with some music software such as iTunes, Windows built-in Media Player, or Winamp to get the sound files. You can even listen to these files with non-iPod MP3 players. It really doesn't matter, as long as you have some way to play music on your computer you will be able to listen to podcasts. "Subscribing" to a podcast is very much like subscribing to a magazine; when a new podcast is available, you will automatically receive it (or notification that it is available) via your chosen choice of software.
